Breakfast (9 am - 3 pm)
The breakfast menu features a rotating menu of approachable dishes from Chef Pancho Ibáñez, a veteran of Pujol in Mexico City, that includes chilaquiles, huevos rancheros, tostadas, tortas, and classic Mexican coffee shop beverages like cafe de la olla and more.
Lunch (11 am - 3 pm)
For lunch, diners can indulge on heartier dishes such as carnitas, miso-mole, and ribeye mojo.

Director of Culinary Operations
Chef Pancho Ibáñez
Originally from the city Xalapa, in Veracruz, Mexico, Chef Pancho Ibáñez carries over 30 years of culinary experience under his belt. In 2006 he joined CC Ambrosía where upon completion of his studies he assumed the position as Head of Culinary Operations. From 2013 to 2018 played an integral role in Chef Enrique Olvera's Restaurant Group as Chef de Cuisine of two-starred Michelin restaurant Pujol in Mexico City.

Since then, Ibáñez has collaborated in the creation of menus and culinary management for Iberostar, Aeromexico, Centurion Lounge, Hotel Matilda, ITAB, Nawá, COP and MarneMX in Mexico City.
Chef Pancho joined the Shōwa Hospitality (CA, FL, NV, NY) team in 2018 and now holds the role of Director of Culinary Operations.
